As soon as I saw this spot listed in Tomball, I knew I had to visit. I’d heard about their homemade pies, the all-day breakfast, and the fact that part of every purchase supports military veterans.

Why Victory Pie Co. Was On Our Radar

Even the name carries deep meaning: Victory Pie Co. was inspired by Victory Gardens from WWII, a symbol of doing your part to support the country. For founder Sheila Blue, that spirit lives on through pies that give back.

It was all the more special when I got to sit down with Sheila herself, whose story is at the heart of this community gem. With her vintage bandana, rolled sleeves, and confident stance, Sheila gives off serious Rosie the Riveter energy!

First Impressions: Vintage Charm and Homey Vibes

Victory Pie Co. looks like it came straight out of a Hallmark movie. There are cozy tables for lunch, a boutique-style section to browse, and a wall covered in military photos and messages of gratitude.

A Legacy in Every Bite

Victory Pie Co. was founded in honor of Sheila’s brother, who was killed in action during a tour in Afghanistan. The two were incredibly close and shared a deep love of cooking. “We both loved to cook.. we would do friendly competitions, send each other pictures of what we had going on during the holidays,” Sheila told us.

After his passing, Sheila and her husband decided they needed to build something that honored his memory and served a greater purpose. The chicken pot pie was the first recipe that came to her. It was a dish that reminded her of home, comfort, and the meals they once made together.

“I just wanted something to do to give back,” she said. “We haven’t just survived, we’ve thrived, because of this community and the way they give back.”

Sheila intentionally designed the pie sizes to be personal-sized, so no one has to share and every serving still looks picture-perfect on the plate. For catering, they also offer bite-sized pies, and sometimes even offer pie flights with multiple mini flavors—perfect for trying more than one.

Victory Pie Co. serves breakfast and lunch all day, with a heavy emphasis on pies—both savory and sweet. Their signature chicken pot pie is what started it all, and it’s still the most popular item on the menu.

They also offer gluten-free options and a build-your-own biscuit sandwich that you can customize with eggs, bacon, sausage, avocado, and more. Coffee drinks are available too, and everything is made fresh in-house.

You’ll find people coming in for a quick lunch, a slice of pie to-go, or lingering with friends over brunch. It has that small-town heart that turns first-timers into regulars.

The chicken pot pie lived up to its reputation—flaky, buttery crust with a creamy filling. The pie flight was a fun way to explore the sweet side of Victory Pie Co., with each one showcasing fresh ingredients and balanced sweetness. And the coffee flight? Absolute joy. 

Everything had that homemade-from-scratch flavor, with generous portions and thoughtful touches. We left full, happy, and definitely already planning a return visit.

Community and Service at the Core

The heart of the shop is the Wall of Honor—a tribute filled with photos of loved ones who served. Customers are invited to bring in photos of their family members in uniform, and many of the veterans pictured are connected directly to regulars who dine at Victory Pie Co. It’s a living part of the café’s soul, reminding everyone of the personal stories behind each bite.

More than just a restaurant, Victory Pie Co. is a tribute to service and sacrifice. Photos of veterans line the walls, and Sheila regularly partners with local military families, hosting events and fundraising efforts throughout the year.

“We wanted to create a place that honors their memory by building something hopeful,” Sheila told us.
